DIY Elderberry Syrup

Ingredients:

  • 4 cups water
  • 1 cup raw honey
  • 1 cup dried elderberries (or 1 ½ cups fresh/ frozen)
  • 2 Tablespoons ginger (peeled and grated)
  • 1 teaspoon ground cinnamon (optional)
  • ½ teaspoon ground cloves (optional)

Instructions:

  1. In a medium saucepan, combine the water, elderberries, ginger, cinnamon and cloves (if using)
  2. Bring mixture to a boil over high heat
  3. Reduce heat to a simmer until the liquid has been reduced about half (check at 20 minutes, may take up to 1 hour)
  4. Remove from heat and allow mixture to cool
  5. Once cool, mash the mixture to extract all the juice from the berries
  6. Pour mixture through a fine mesh strainer into a mixing bowl, discarding the leftover pulp
  7. Ensure the liquid has fully cooled, then stir in raw honey 
  8. Pour syrup into an air-tight jar (preferably a mason jar) and store in fridge 
  9. Store in fridge and take daily! (should last about 2 weeks in the fridge)
  10. Tip: store leftovers in ice cube trays in the freezer, once frozen add to a freezer safe bag for storage
